A single vineyard expression of Chardonnay carefully grown using sustainable organic farming methods. The grapes were hand harvested and whole bunch pressed to preserve their delicate flavours. The wine underwent wild fermentation in fine French oak barrels, with partial malolactic fermentation, to enhance complexity. The Coombe was matured on lees for six months, adding texture and depth before bottling in October 2025.
